Our Coffee

A balanced coffee with medium acidity, high sweetness and hints of chocolate and caramel. Dropsy Organic is produced with 100% Arabica beans from the farms, which is very vigorous and has yellow, uniform, high sieve beans, grown an altitude of long. The organic coffee certification proves the lack of chemical fertilizers and agricultural pesticides in the production of this blend.

The harvesting process begins at the precise moment of the fruits development, when the sugar in the cherries is fully developed. Here, the care with planting continues: harvesting is done manually, using cloths so as to avoid contact with the ground, which ensures the integrity of the beans.

To ensure an even roasting, the beans are carefully selected and undergo different processing stages: a screen grader (which separates the beans by size), a densimetric table (separation by weight) and an electronic device (separation by color). Finally, the roasting team performs a visual inspection on a belt, with zero tolerance for defects. This dedication ensures that we are able to keep the special characteristics of flavor and aromas that make up Café Dropsy.
